Bruschetta Pasta with Goat Cheese
One of my favorite dishes to make is Bruschetta Pasta with Goat Cheese! I love pasta and appreciate that there are so many varieties of pasta to choose from these days! One of the most popular alternatives to the typical white pasta and wheat pasta is brown rice pasta – brown rice pasta is made from ground brown rice, making it higher in fiber than most other pasta varieties. Brown rice pasta is also a great option for those with Celiac disease or gluten-intolerance, due to the absence of wheat, rye, oats, and barley.

Ingredients
- 8 oz. brown rice pasta
- 8 oz. fresh Bruschetta sauce
- Fresh arugula
- 4 oz. crumbled goat cheese
Instructions

Cook the pasta to desired doneness, then drain.

Return the pasta to the same pan it was cooked in.

Add the fresh Bruschetta sauce to the pasta and heat until warm.

Add the arugula and warm until the arugula is slightly wilted.

Remove the pasta from the heat.

Top with crumbled goat cheese and serve.
