Tuna English Muffin Sandwich
This all-time classic is one of my favorites! It’s quick and easy to make, and of course nutritious! A little about the history of English muffins – they were created in the 1800s by Samuel Bath Thomas. He used leftover bread, biscuit dough scraps, and mashed potatoes to create a muffin that is crunchy on the outside and soft in the inside. Even though Thomas eventually moved to America from England, the name English muffins stayed the same.

Ingredients
- 1 English muffin
- 1/2 can 2 oz. tuna fish in water (drained)
- 1/8 cup diced onion
- Mayonnaise
- Arugula
- Tomato slices
- Shredded cheese
Instructions

Slice the English muffin in half and toast.

In a small bowl, mix the tuna fish, diced onion, and mayonnaise.

Top one English muffin half with a scoop of the tuna mixture, arugula, tomato slices, and shredded cheese.

Place the other English muffin half on top to form a sandwich.
